On the first Friday of every month, Dan the Man will light up his smoker and brings his Texas-style barbecue to the Eastern Suburbs Rugby Club starting from 5 August 2016 and continuing until 2 December 2016.
Dan the Man Cooking is now in its fifth year. It started in 2011 from hosting dinner parties for friends, family and often relative strangers. His food was praised and his guests returned time after time. Since then his cooking business has become a full-time gig.
Dan the Man honed his barbecue craft under Brooklyn pitmaster Nestor Laracuente, one of America’s most prominent pitmasters who uses the “low and slow” smoking technique used in the South. Dan hunted him down on a trip to the USA five years ago and has returned annually ever since to learn the ways of the ‘Brooklyn Pit Rat’. Nestor is also the creator of his own range of dry rubs, which have been shipped to Sydney exclusively for Dan’s monthly barbecues.
On Friday 5 August 2016, I headed down to Dan the Man’s headquarters, The Field at the Eastern Suburbs Rugby Club, to experience the ‘Up in Smoke’ Texas-style barbecue. The food was served on a cafeteria-style tray topped with slow-smoked, Texas-style beef brisket, pulled pork, chicken, pulled beef brisket with a black bean mix, and classic barbecue sides of mac and cheese, coleslaw, white bread, pickles and jalapenos. The brisket had been slow smoked for 13 hours. The meat was succulent and the serving size was large. Dan the Man cooks his meats on site and cuts them in front of you. The trays are prepared with meat that is fresh out of the smoker.
The Field at the Eastern Suburbs Rugby Club is a licensed premises where you can buy drinks from the bar. There is seating indoors and outdoors on long tables with benches. It is suitable for couples, groups and families.
