Hacienda Sydney, the new vista bar situated in the Pullman Quay Grand Sydney Harbour, launched on Thursday 4 August 2016.
Hacienda Sydney is a botanical oasis with spectacular views over Sydney Harbour. The bar is inspired by the grand plantation architecture of Cuba and the luxury vintage hotels of 1950’s Miami.
Hacienda Sydney is the latest venue to be opened by Applejack Hospitality – the company that is famed for venues such as the Botanist Kirribilli, SoCal Neutral Bay, The Butler Sydney and Bondi Hardware.
Guests were welcomed on arrival with a choice of two signature cocktails – Bottled Mojito (Blanco rum, crème de menthe, lime, mint, falernum, orange bitters) and Old Presidente (Aged rum, orange curacao, house spiced raspberry syrup & Angostura bitters served in a smoked rocks glass). Guests also sipped Veuve Clicquot and a premium selection of wine and beer throughout the night.
Award winning Executive Chef, Stefan Brademann, has curated a menu inspired by Cuba’s traditional trading partners, and their local abundant ingredients. The menu he created for the launch to showcase a selection of the dishes on the full menu included: blackened rice crisps topped with crab and finger lime; scallop ceviche, yucca fries with red pepper sauce; Pao De Quejo, which is tapioca cheese bites and capsicum salsa; jamon croquettes; Cajun spiced grilled prawns; Vaca frita, which is charred skirt steak with chimichurri; and Hacienda’s signature Cuban Reuben, which is Cuban spiced homemade pastrami, smokey cheese and Marrickville pickles.
For dessert, guests indulged in Churros with dulce de leche and pumpkin and ginger flan.
There were 200 guests at the event including top media and celebrities such as: actor and model Lana Kington; actor and model Madison Lloyd; reality TV star and TV presenter Ricci Guarnaccio; actor, eco-friendly stylist and television presenter Faye De Lanty; health and fitness blogger Caroline Groth; actor and singer-songwriter Melissa Tkautz.
